Cranberry-Orange Nut Bread
This bread is a staple at our Thanksgiving dinner table. I often turn the batter into muffins for a healthy breakfast on the go.1 tablespoon flax meal or chia seeds
3 tablespoons water
2 cups whole wheat pastry flour
1½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon sea salt
1 tablespoon grated orange zest
¾ cup orange juice
¼ cup unsweetened applesauce
¼ cup agave nectar or pure maple syrup
1 cup chopped fresh cranberries
½ cup chopped walnuts
Yields: 6 to 8 servings
