Oatmeal Raisin Muffins
I love a big, fluffy muffin, but most made in bakeries today are loaded with oils and sugars. Here’s my version of a healthier oatmeal raisin muffin! It’s irresistible with a cup of hot tea.1 tablespoon flax meal or chia seeds
3 tablespoons water
1½ cups whole wheat pastry flour
½ cup oats
2½ teaspoons baking powder
¼ teaspoon sea salt
½ teaspoon ground cinnamon
½ cup chopped walnuts
1 cup raisins
¾ cup unsweetened plant-based milk
½ cup unsweetened applesauce
¼ cup molasses
Yields: 8 to 10 muffins
