Thai Dressing
This is a wonderful dressing for any chopped or Asian salad. Creamy and full of flavor, it also makes the perfect topping for a veggie burger.¼ cup raw cashews
½ cup unsweetened plant-based milk
¼ cup water
2 tablespoons canned lite coconut milk
1½ tablespoons apple cider vinegar
1 tablespoon green curry paste
1 tablespoon lime juice
1 tablespoon low-sodium tamari
1 teaspoon pure maple syrup
5 large fresh basil leaves
Yields: 1¼ cups

Combine all the ingredients in a blender and blend on high until smooth and creamy. Store in an airtight container in the refrigerator for up to a week
