Spicy Buffalo Pasta Salad 

This lettuce and pasta salad tossed with a creamy Buffalo-style blue cheez dressing is spicy, crunchy, and delicious. This is a fun summertime salad that appeals to both kids and adults. It’s also a perfect accompaniment to grilled veggie burgers or veggie kabobs.
Dressing
2 tablespoons raw cashews or almonds
4 ounces extra-firm tofu
3 tablespoons lemon juice
2 to 4 tablespoons Frank’s Original Red Hot Sauce
2 tablespoons tahini
1½ tablespoons pure maple syrup
1 teaspoon garlic powder
Salad 
8 to 10 ounces whole-grain penne or rotini
2 celery stalks, thinly sliced
2 carrots, peeled and shredded
2 cups peas, fresh or frozen (thawed)
5 cups thinly sliced romaine lettuce (about 2 small hearts)
Yields: 6 servings

Cook Time: 0 minutes
1. Combine the dressing ingredients in a high-powered blender and blend until smooth and creamy. Set aside.
2. Cook the pasta according to the package instructions. Drain and rinse under cold water.
3. Combine the pasta, celery, carrots, peas, and dressing in a large bowl and toss until thoroughly coated.
4. Just before serving, add the lettuce and toss gently.
