Kale Power Salad
I love salads that feel like a meal all on their own! This salad is a powerhouse packed with all kinds of nutrients, flavors, and textures.
5 to 6 cups chopped kale
1 recipe Orange Tahini Dressing (page 91 )
1 red bell pepper, seeded and diced
1 carrot, peeled and shredded
1 cup thinly sliced red cabbage
1 cup frozen edamame or peas, thawed
2 cups cooked quinoa
1 orange, peeled and sliced
¼ cup slivered almonds
Yields: 4 servings
Prep Time: 25 minutes
Cook Time: 0 minutes
Put the kale in a large bowl and drizzle the dressing over it. Use your hands to firmly massage the dressing into the leaves. The leaves will soften and wilt as you do this. I recommend massaging the leaves for 3 to 5 minutes to tenderize them. Add the remaining ingredients and toss well. Serve.
