Baked Bananas
Bananas are loaded with nutrients and just happen to be naturally sweet and creamy. They also always seem to go from green to ripe overnight. Baked bananas are an easy way to use up those ripened bananas quickly. I often serve these with our favorite plant-based ice cream for a special occasion dessert.2 tablespoons lime juice
2 tablespoons pure maple syrup
1 tablespoon rum
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
2 bananas, peeled and sliced lengthwise
Yields: 2 to 4 servings
Prep Time: 10 minutes
Cook Time: 15 minutes
1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
2. In a small bowl, whisk together the lime juice, maple syrup, rum, cinnamon, and nutmeg.
3. Place the four banana halves on the prepared baking sheet. Brush the syrup sauce evenly over them. Bake for 10 to 15 minutes. Serve warm.
